Khaman dhokla is Gujarat’s beloved steamed snack — soft, jiggly, golden squares of fermented gram-flour batter, tempered with mustard, green chilli and a sweet-tangy drizzle. Light, protein-rich and irresistible with green chutney and a cup of chai.

Ingredients
- ▪Gram flour / besan (ચણાનો લોટ)1.5 cups
- ▪Semolina (fine)2 tbsp
- ▪Yogurt2 tbsp
- ▪Ginger-green chilli paste1 tbsp
- ▪Turmeric1/4 tsp
- ▪Sugar1 tbsp
- ▪Lemon juice1 tbsp
- ▪Eno fruit salt or baking soda1 tsp
- ▪Mustard seeds1 tsp
- ▪Green chillies, slit3
- ▪Curry leaves1 sprig
- ▪Oil, sugar, saltfor tempering

- Eno gives the signature sponge; baking soda + a little extra lemon works if you can’t find it (Indian stores stock Eno).
- Add the Eno at the very last second and steam right away — the froth is the rise.
Method
- 1Whisk the besan, semolina, yogurt, ginger-chilli paste, turmeric, sugar, salt and about 3/4 cup water into a smooth, lump-free batter of thick pouring consistency. Rest 10 minutes.
- 2Grease a plate/tin and set a steamer to boil.
- 3Just before steaming, add the lemon juice and Eno, whisk briskly one direction until frothy, and pour immediately into the tin.
- 4Steam on high for 15–18 minutes until a skewer comes out clean. Cool slightly and cut into squares.
- 5Temper: heat 2 tbsp oil, splutter mustard seeds, add slit chillies and curry leaves, then 1/2 cup water with a spoon of sugar and a pinch of salt; boil and pour evenly over the dhokla so it soaks in. Garnish with coriander and coconut.
